The saying "You are what you eat" highlights the importance of our diet in influencing our overall health. We know that the foods and drinks we consume form the foundation of how our bodies and minds function. However, many people wonder what we should eat to achieve optimal health. Over the past few decades, we have received numerous contradictory messages about nutrition. It often seems questionable that governments consult food producers for recommendations on dietary guidelines. As we continue to study food science, biology, and chemistry, we are gaining a better understanding of what we truly need to eat, how our bodies process that food, and how it affects our health and the microbiome within our systems.
